Copycat Starbucks Cranberry Bliss Bars:


Bars:

  • 1 cup (2 sticks) butter, melted

  • 1 1/2 cups packed brown sugar

  • 2 eggs

  • 1 tsp. orange extract

  • 1 tsp. vanilla extract

  • 1/2 tsp. ground ginger

  • 1 tsp. baking powder

  • 1/2 tsp. salt

  • 2 cups all-purpose flour

  • 1 cup white chocolate chips

  • 3/4 cup dried cranberries

 

Frosting & Toppings:

  • 8 oz. cream cheese, softened

  • 1 1/2 cups powdered sugar

  • 1/2 teaspoon orange extract

  • 1/2 teaspoon vanilla extract

  • 1/3 cup Craisins, roughly chopped

  • 1/4 cup white baking chocolate or almond bark, melted  

 

Preheat oven to 350 degrees F. Line a 13x9 inch pan pan with parchment paper. In a mixer, beat together melted butter & brown sugar over medium speed until combined. Add in both eggs, 1 tsp orange extract, and 1 tsp vanilla extract & beat until mixed well. Add in ground ginger, baking powder, salt, & flour, beating until just blended. (Don’t overmix!) Fold in white chocolate chips & dried cranberries by hand.


Spread the bar mixture evenly into the bottom of parchment prepared pan, & bake in preheated oven for ~23 minutes until set & golden brown at the edges. Remove from oven & place on a wire rack to cool. (Allow to completely cool before topping with frosting.)


For the frosting, beat cream cheese & powdered sugar together with an electric mixer until smooth. Add 1/2 tsp orange extract & 1/2 tsp vanilla extract, mix well. Top cooled bars with cream cheese frosting. Sprinkle with chopped dried cranberries, & drizzle white chocolate over the top with a fork. Let the bars chill & set in the refrigerator for ~1 hour. Cut into triangles, & enjoy!
